Banana Oat Cookies
Ingredients:
2 ripe bananas
1 cup rolled oats
1/2 tsp cinnamon
1 tsp vanilla extract (optional)
Pinch of salt
Optional mix-ins: dark chocolate chips, raisins, chopped nuts, flaxseed or chia seeds
Instructions:
Preheat oven to 350°. Line a baking sheet with parchment paper.
In a bowl, mash the bananas until smooth.
Stir in the oats, cinnamon, vanilla, and salt. Fold in any mix-ins if using.
Scoop tablespoon-size portions onto the baking sheet and flatten slightly.
Bake for 12-15 minutes, or until the cookies are set and lightly golden.
Let them cool on a wire rack and enjoy!
