Banana Oat Cookies

Ingredients:

  • 2 ripe bananas

  • 1 cup rolled oats

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract (optional)

  • Pinch of salt

  • Optional mix-ins: dark chocolate chips, raisins, chopped nuts, flaxseed or chia seeds

Instructions:

  1. Preheat oven to 350°. Line a baking sheet with parchment paper.

  2. In a bowl, mash the bananas until smooth.

  3. Stir in the oats, cinnamon, vanilla, and salt. Fold in any mix-ins if using.

  4. Scoop tablespoon-size portions onto the baking sheet and flatten slightly.

  5. Bake for 12-15 minutes, or until the cookies are set and lightly golden.

  6. Let them cool on a wire rack and enjoy!
