Glow Bowl(Quinoa, Veggies & Lemon-Tahini Dressing

Ingredients:

• 1 cup cooked quinoa

• 1 cup chopped kale (or spinach)

• ½ cup roasted sweet potato (cubed)

• ½ cup chickpeas (drained & rinsed)

• ¼ avocado, sliced

• ¼ cup cherry tomatoes, halved

• 2 tbsp tahini

• Juice of 1 lemon

• 1 tbsp olive oil

• 1 tsp honey or maple syrup (optional)

• Salt & pepper to taste.

How To Make It:

1. Cook quinoa according to package directions. Let cool slightly.

2. Roast sweet potato cubes with olive oil, salt, and pepper at 400°F for 20–25 minutes.

3. In a bowl, toss kale with a squeeze of lemon to soften.

4. Assemble: layer quinoa, kale, sweet potatoes, chickpeas, tomatoes, and avocado.

5. Whisk together tahini, lemon juice, olive oil, and honey/maple syrup. Drizzle over the bowl.

6. Enjoy warm or chilled
